Fermentation was also made great use of to preserve foods that could be kept for long periods of time. Some cheeses benefit from this process. Some of the fermentation processes for food preservation are also a type of pickling. Many common foods such as sauerkraut, nukazuke, kimchi, and surströmming are produced with this process. These can be kept for long times without refrigeration.
